We brewed this hop-forward IIPA with our good friends at Dominion City with tons of tropical, citrus, orange aromas and over to the top hop flavour. The spelt malt (Dinkle) creates a rich and creamy brew, think silky orange creamsicle, this hazer is way too easy to drink for 9%.

We love workin’ with Scott and his team at Dominion City, so when we met up last time we decided to do another collab, but at Sawdust City this time. It seemed like a no brainer that we worked on a big IIPA together. Wanting to work with some new grains to get a nice hazy soft body, we went with dinkle malt (or spelt in English). It has tons of protein and a beauty colour that leaves you with a rich lovely, hazy yellow beer. We are also on a big Cashmere hop kick, so we wanted to use that, both in pellets and in cryo form, alongside some old stand by favourites like Citra and Galaxy.
