My intention with this beer was to brew something similar to some of the hazers we’ve been brewing of late (Magic, Juicin) but with a bit of a lower abv and drier…. something more “sessionable”. So with this one we mashed in at a slightly lower temperature to create more fermentable sugars resulting in a lower final gravity (less residual sugar). The beer is very smooth but doesn’t have the super full mouthfeel compared to, say, Everyday Magic. I also wanted something really citrusy tropical to play up the refreshing/dry aspect of the beer so we loaded this one up with Citra (big citrus) and Zythos hops (tangerine, grapefruit and pineapple).
This is Brendan’s final brew as Sawdust’s head brewer. But we’re not losing him altogether, he’s switching up roles and you’ll see him a lot more in the Toronto area as our new Toronto sales rep. Got a technical question about the beer? He’s your guy. Congrats on the new role Brizzy, we’re lucky to have ya!
